For the wine to be able to withstand two years of ageing in oak, it is of paramount importance to start with choosing the most mature and harmonious clusters. After harvesting, Tempranillo has the stems removed and the berries squeezed later to be poured into stainless steel tanks, where they are to be fermented according to Ganimede system, which provides a natural release of carbon dioxide avoiding oxidation better than any other process, improving aroma and colour extraction.
In the nose the wine demonstrates its fine complexity with shades of ripe fruit, especially redcurrant cherry, which performs in full harmony with the tones of good woods, species, vanilla and coconut, and with background licorice nuances. In the mouth it performs a great balance between a tasty and pretty sweet flavour, due to its mature tannins, and freshness, thanks to its good acidity.
