TASTING NOTES:
View: dark cherry medium intensity, bright, reflections colored tile.
Nose: Elegant and intense, red fruits, hints of licorice aromas of maturity and aging: spices, snuff and vanilla leaf.
Mouth: soft, round, balanced and very fresh.
AGEING: 18 months in American oak barrels. At this time, embodiment 2 or 3 decanting wine clarification naturally, thus avoiding the need of subsequent treatments. After its time in oak, the wine being for 2 years in bottle before going to market.
PREPARATION: a rather traditional winemaking: After de-stemming and crushing, performing a moderately long maceration after alcoholic and malolactic fermentation, wine decanted and clarified slightly to pass them into barrels.
PAIRING: vegetable dishes, vegetable stews, rice with meat or vegetables, cheeses moderately strong, duck and bluefish.
